Delicious to eat and easy to make; what else could you ask for? Muffins are great way to fill that hunger that works its way into your day at about 3:30, without ruining your appetite before dinner. This recipe contains yoghurt, oats and bananas, so it’s a snack you can feel good about!
Ingredients (serves 9-12)
2 ½ cups self raising flour
1 cup whole meal self raising flour
1 cup brown sugar
½ cup olive oil
¾ low fat yoghurt
3 eggs
2 ripe bananas mashed
20ml vanilla essence
1 cup rolled oats
2 tablespoons Honey
Method
Pre heat oven to 180 degrees
Sift flours in to large bowl stir in sugar, make well in centre and add oil, yoghurt, eggs, honey & ¾ cup of oats, gently mix.
Place muffin moulds in muffin tray, lightly spray with canola/olive oil
¾ fill muffin, garnish with additional oats mould and bake for 25 – 30 minutes @ 180°
