Dineamic Mixed berry Muffins

As part of the AFL Players’ TeamUp 20 Day Challenge we’ve asked former player and founder of Dineamic Jason Johnson to provide a few recipes to help ensure you are eating healthy while getting active over the 20 days.


3 cups of self-raising flour

1 1/2 cups of sugar

Lemon rind

1 tablespoon of vanilla essence

1 cup of Yoghurt

1 cup of frozen mixed berries

3 whole eggs

½ cup olive oil

1 cup of milk


Shift the sugar and flour, than add the rind. In separate bowl add the liquid ingredients and mix until the egg has being mix through the wet mix.

Make well in the middle of dry mix and add the liquid and mix until you get a thick wet consistency, fold through berries.  Grease a 12-hole muffin tray and spoon the mix ¾ full to allow for the muffin to rise.

Bake for 25-30 @ 180 degrees.  To check if muffin is cooked insert a skewer and if it comes out clean, it time to make a coffee and enjoy!
